For example, when I used the WP Table Manager plugin to edit the table, I added a long text to a cell. After saving the table, I refreshed the page and found that the text disappeared strangely. Does the WP Table Manager plugin have a limit on the number of words in the text in a cell?

It could be your column type is set "VARCHAR", please switch its value to "TEXT". Please go here for more details:
